Using Prism Mac, if I try to change the font to Symbol it becomes Lucida instead.

Mac OSX does this sometimes. It usually happens when someone wants to enter a Greek letter, so types say "a" and then selects the letter and tries to change to symbol font. But no need to do that. Prism has a button to insert Greek, and math symbols directly.
