In Prism 4, when I make a new data table (plus graph), I uncheck the option to create a new linked Info sheet. But Prism creates a new Info sheet anyway.

This is a bug in 4.00 (Windows) and 4.0a (Mac).

To work around the problem, go to the Info sheet tab of the Preferences dialog. Uncheck the option to automatically create a linked info sheet. Now when you make a new data table, the option to make an info table will be unchecked by default. If you check the option, you can create an info table, when you want one.
